These Andes Mint Cookies are a delightful treat combining rich chocolate and refreshing mint flavors, perfect for any occasion.
Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla extract
3 cups all-purpose flour
1 cup unsweetened cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1 cup Andes mint baking chips
Instructions
1. Preheat the oven to 350°F (175°C).
2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until smooth.
3. Beat in the eggs one at a time, then stir in the vanilla.
4. Combine the flour, cocoa powder, baking soda, and salt; gradually stir into the creamed mixture.
5. Fold in the Andes mint baking chips.
6. Drop by rounded tablespoons onto ungreased cookie sheets.
7. Bake for 10-12 minutes in the preheated oven. Allow cookies to cool on the baking sheets for a few minutes before transferring to wire racks.
Notes
For a more intense mint flavor, add a few drops of peppermint extract.
Store cookies in an airtight container for up to a week.
