Description

Ingredients

3 ripe bananas

1/2 cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1/2 teaspoon salt

1 1/2 cups all-purpose flour

1/2 cup chopped walnuts (optional)

8 oz cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract for frosting


Instructions

1. Preheat the oven to 350°F (175°C).

2. In a mixing bowl, mash the ripe bananas with a fork.

3. Add the softened butter and mix until well combined.

4. Stir in the sugar, eggs, and vanilla extract until smooth.

5. Sprinkle the baking soda and salt over the mixture and stir to combine.

6. Gradually add the flour and mix until just combined. Fold in walnuts if using.

7. Pour the batter into a greased 9×5 inch loaf pan and bake for 60 minutes or until a toothpick comes out clean.

8. While the cake cools, prepare the cream cheese frosting by beating the softened cream cheese, powdered sugar, and vanilla extract until smooth.

Notes

For a richer flavor, use brown sugar instead of granulated sugar.
