Description

These delicious blackberry lime bars are a perfect balance of tart and sweet, making them an irresistible dessert for any occasion.


Ingredients

1 cup all-purpose flour

1/2 cup powdered sugar

1/2 cup unsalted butter, softened

1/4 teaspoon salt

1 cup fresh blackberries

1/4 cup fresh lime juice

1 cup granulated sugar

2 large eggs

1/4 cup all-purpose flour

1/2 teaspoon baking powder

Zest of 1 lime


Instructions

1. Preheat the oven to 350°F (175°C).

2. In a bowl, mix 1 cup flour, powdered sugar, butter, and salt until crumbly. Press into a greased 8×8 inch baking dish.

3. Bake for 15 minutes or until lightly golden.

4. In another bowl, whisk together blackberries, lime juice, granulated sugar, eggs, 1/4 cup flour, baking powder, and lime zest.

5. Pour the blackberry mixture over the baked crust.

6. Bake for an additional 20-25 minutes until set and slightly golden on top.

7. Allow to cool completely before cutting into bars.


Notes

For a sweeter taste, add more sugar to the blackberry mixture.

These bars can be stored in the refrigerator for up to a week.
