Description

These Bourbon BBQ Glazed Meatballs are tender and juicy, coated in a sweet and tangy bourbon BBQ sauce, complemented by sweet pineapple chunks. Perfect for parties or game day!


Ingredients

1 lb ground beef

1/2 cup breadcrumbs

1/4 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 tsp onion powder

1/2 tsp black pepper

1/2 tsp salt

1/2 cup bourbon

1 cup BBQ sauce

1 cup pineapple chunks, fresh or canned, drained


Instructions

1. Preheat the oven to 400°F (200°C).

2. In a large bowl, combine ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, onion powder, black pepper, and salt. Mix well.

3. Shape the mixture into 1-inch meatballs and place them on a baking sheet.

4. Bake meatballs in the preheated oven for 20-25 minutes until browned and cooked through.

5. In a saucepan, heat bourbon over medium heat for 2-3 minutes. Add BBQ sauce and stir to combine.

6. Add the baked meatballs to the sauce and toss to coat.

7. Serve meatballs topped with pineapple chunks and additional sauce if desired.


Notes

For a spicier kick, add some chili flakes to the BBQ sauce.

These meatballs can be made ahead of time and reheated for serving.
