Deliciously spiced pumpkin cheesecake bites infused with bourbon and drizzled with a sweet glaze. Perfect for holiday gatherings!
Ingredients
– 1 cup pumpkin puree
– 8 oz cream cheese, softened
– 1/2 cup sugar
– 1/4 cup bourbon
– 1 tsp vanilla extract
– 2 tsp pumpkin spice
– 1/4 tsp salt
– 1 cup graham cracker crumbs
– 1/2 cup unsalted butter, melted
– 1 cup powdered sugar
– 2 tbsp milk

3. 2. In a bowl, combine graham cracker crumbs and melted butter. Press into the bottom of a greased mini muffin tin.
4. 3. In a separate bowl, beat cream cheese and sugar until smooth. Add pumpkin puree, bourbon, vanilla, pumpkin spice, and salt. Mix until well combined.
5. 4. Spoon the cheesecake mixture over the crust in the muffin tin.
6. 5. Bake for 15-20 minutes or until set. Let cool completely.
7. 6. In a small bowl, whisk together powdered sugar and milk to create the glaze.

Notes
These bites can be made a day in advance and stored in the refrigerator. Adjust the bourbon to taste for a stronger or milder flavor.
