Ingredients
2 cups mashed sweet potatoes
1/2 cup unsalted butter, melted
1/4 cup sugar
1 teaspoon salt
2 teaspoons active dry yeast
4 cups all-purpose flour
1 cup warm milk
2 large eggs
1 teaspoon cinnamon
Instructions
1. 1. In a large bowl, combine warm milk and yeast. Let it sit for 5 minutes until frothy.
2. 2. In another bowl, mix mashed sweet potatoes, melted butter, sugar, salt, and cinnamon.
3. 3. Add the yeast mixture and eggs to the sweet potato mixture and stir until combined.
4. 4. Gradually add flour, one cup at a time, mixing until a soft dough forms.
5. 5. Knead the dough on a floured surface for about 5 minutes until smooth.
6. 6. Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
7. 7. Preheat the oven to 350°F (175°C).
8. 8. Punch down the dough and shape it into rolls. Place in a greased baking dish.
9. 9. Let the rolls rise for another 30 minutes, then bake for 25-30 minutes until golden brown.
Notes
These rolls can be made ahead of time and frozen. Just reheat them in the oven before serving.
