Description

These buttery sweet potato rolls are soft, fluffy, and perfect for any meal. They are made with sweet potatoes for a hint of sweetness and a rich buttery flavor.

2 cups mashed sweet potatoes

1/2 cup unsalted butter, melted

1/4 cup sugar

1 teaspoon salt

2 teaspoons active dry yeast

4 cups all-purpose flour

1 cup warm milk

2 large eggs

1 teaspoon cinnamon


Instructions

1. 1. In a large bowl, combine warm milk and yeast. Let it sit for 5 minutes until frothy.

2. 2. In another bowl, mix mashed sweet potatoes, melted butter, sugar, salt, and cinnamon.

3. 3. Add the yeast mixture and eggs to the sweet potato mixture and stir until combined.

4. 4. Gradually add flour, one cup at a time, mixing until a soft dough forms.

5. 5. Knead the dough on a floured surface for about 5 minutes until smooth.

6. 6. Place the dough in a greased bowl, cover, and let rise for 1 hour or until doubled in size.
