Description

Ingredients

1 medium head of cabbage, chopped

2 carrots, diced

1 onion, chopped

3 cloves of garlic, minced

4 cups vegetable broth

1 can diced tomatoes

1 teaspoon thyme

Salt and pepper to taste


Instructions

1. In a large pot, heat some oil over medium heat.

2. Add the onion and garlic, sauté until translucent.

3. Stir in the carrots and cook for another 5 minutes.

4. Add the chopped cabbage and cook until slightly wilted.

5. Pour in the vegetable broth and diced tomatoes.

6. Season with thyme, salt, and pepper.

7. Bring to a boil, then reduce heat and simmer for 30 minutes.
