Ingredients
12 mini sweet peppers
2 cups cream cheese, softened
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
3 cloves garlic, minced
2 tablespoons fresh parsley, chopped
1 tablespoon fresh basil, chopped
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon red pepper flakes (optional)
1 tablespoon olive oil
Instructions
1. Preheat your oven to 375°F (190°C).
2. Cut the mini peppers in half lengthwise and remove the seeds.
3. In a mixing bowl, combine cream cheese, mozzarella, Parmesan, garlic, parsley, basil, salt, black pepper, and red pepper flakes.
4. Stuff each pepper half with the cheese mixture.
5. Place the stuffed peppers on a baking sheet and drizzle with olive oil.
6. Bake for 20-25 minutes or until the cheese is melted and the peppers are tender.
7. Remove from oven and let cool slightly before serving.
Notes
These stuffed mini peppers can be made ahead of time and stored in the refrigerator before baking.
