This Cozy Cheddar Potato Bake is a comforting dish that combines creamy potatoes with rich cheddar cheese and crispy bacon. It’s perfect for family gatherings or a cozy night in.
Ingredients
4 large russet potatoes, peeled and sliced
2 cups shredded sharp cheddar cheese
1 cup cooked bacon, chopped
1 cup heavy cream
1 cup milk
1/2 cup sour cream
2 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon paprika
1/2 cup green onions, chopped (for garnish)
Instructions
1. Preheat the oven to 375°F (190°C).
2. In a large mixing bowl, combine the heavy cream, milk, sour cream, minced garlic, salt, black pepper, and paprika.
3. Layer half of the sliced potatoes in a greased baking dish. Pour half of the cream mixture over the potatoes and sprinkle with half of the cheddar cheese and half of the bacon.
4. Repeat the layering process with the remaining potatoes, cream mixture, cheese, and bacon.
5. Cover the baking dish with aluminum foil and bake for 45 minutes.
6. Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are tender and the top is golden and bubbly.
7. Garnish with chopped green onions before serving.
Notes
For a spicier version, add some diced jalapeños to the layers.
This dish can be prepared a day in advance; just cover it and refrigerate before baking. Increase cooking time by 10-15 minutes if baking from cold.
