Ingredients
1 lb ground beef
1 can (15 oz) kidney beans, drained and rinsed
1 can (15 oz) black beans, drained and rinsed
1 can (28 oz) diced tomatoes
2 cups elbow macaroni
1 packet chili seasoning
3 cups shredded cheddar cheese
1 box cornbread mix
1 cup milk
1 egg
Instructions
1. 1. Preheat your oven to 350°F (175°C).
2. 2. In a large skillet, cook the ground beef over medium heat until browned.
3. 3. Add the kidney beans, black beans, diced tomatoes, chili seasoning, and macaroni to the skillet. Stir well.
4. 4. Cook for about 10 minutes, or until the macaroni is tender.
5. 5. Transfer the chili mac mixture to a greased 9×13 inch baking dish.
6. 6. In a separate bowl, combine the cornbread mix, milk, and egg. Mix until smooth.
7. 7. Pour the cornbread batter over the chili mac mixture and spread evenly.
8. 8. Top with shredded cheddar cheese.
9. 9. Bake for 25-30 minutes, or until the cornbread is golden brown and cooked through.
10. 10. Let it cool for a few minutes before serving.
Notes
This dish can be made ahead of time and stored in the refrigerator. Reheat in the oven before serving.
