Ingredients
2 pounds russet potatoes
1/2 cup unsalted butter, melted
1/2 cup sour cream
1/2 cup cream cheese, softened
1/4 cup milk
4 cloves garlic, minced
1 teaspoon salt
1/2 teaspoon black pepper
1 cup shredded cheddar cheese
1/4 cup chopped green onions (for garnish)
Instructions
1. 1. Preheat the oven to 350°F (175°C).
2. 2. Peel and cube the potatoes, then boil them in salted water until tender, about 15-20 minutes.
3. 3. Drain the potatoes and return them to the pot.
4. 4. Add melted butter, sour cream, cream cheese, milk, minced garlic, salt, and pepper to the potatoes. Mash until smooth and creamy.
5. 5. Transfer the mashed potatoes to a greased 9×13 inch baking dish.
6. 6. Sprinkle shredded cheddar cheese evenly over the top of the mashed potatoes.
7. 7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
8. 8. Garnish with chopped green onions before serving.
Notes
For extra flavor, you can add cooked bacon bits or fresh herbs like thyme or rosemary.
