These Creamy Mac & Cheese Stuffed Peppers are the ultimate comfort food for cozy nights. Filled with creamy pasta and topped with gooey cheese, they make for a satisfying and delicious meal.
Ingredients
4 large bell peppers (any color)
2 cups cooked macaroni pasta
1 cup shredded cheddar cheese
1 cup shredded mozzarella cheese
1 cup milk
2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Fresh parsley for garnish
Instructions
1. 1. Preheat the oven to 375°F (190°C).
2. 2. Cut the tops off the bell peppers and remove the seeds.
3. 3. In a saucepan, melt the butter over medium heat. Stir in the flour and cook for 1 minute.
4. 4. Gradually whisk in the milk, cooking until thickened.
5. 5. Stir in the garlic powder, onion powder, salt, and pepper.
6. 6. Remove the saucepan from heat and mix in the cooked macaroni and half of the cheddar and mozzarella cheese.
7. 7. Stuff the bell peppers with the mac and cheese mixture.
8. 8. Place the stuffed peppers in a baking dish and sprinkle the remaining cheese on top.
9. 9. Cover with foil and bake for 25 minutes, then remove the foil and bake for an additional 10 minutes or until the cheese is bubbly and golden.
10. 10. Garnish with fresh parsley before serving.
Notes
Feel free to customize the cheese blend to your liking. You can also add cooked bacon or vegetables to the mac and cheese for added flavor.
