Ingredients
8 oz elbow macaroni
2 cups pumpkin puree
2 cups shredded sharp cheddar cheese
1 cup milk
1/2 cup heavy cream
1 tsp garlic powder
1 tsp onion powder
1 tsp salt
1/2 tsp black pepper
1/4 tsp nutmeg
1/4 cup grated Parmesan cheese
1/2 cup panko breadcrumbs
1 tsp dried thyme
1 tsp dried sage
1/4 cup melted butter
Instructions
1. Preheat the oven to 350°F (175°C).
2. Cook the elbow macaroni according to package directions; drain and set aside.
3. In a large saucepan over medium heat, combine the pumpkin puree, milk, heavy cream, garlic powder, onion powder, salt, black pepper, and nutmeg. Stir until well combined and heated through.
4. Add the cooked macaroni to the pumpkin sauce and stir to coat evenly.
5. Pour the mac and cheese into a greased baking dish.
6. In a small bowl, combine the panko breadcrumbs, Parmesan cheese, thyme, sage, and melted butter. Mix well.
7. Sprinkle the herb crumble evenly over the mac and cheese.
8. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbly.
9. Let cool for a few minutes before serving.
Notes
This dish can be made ahead of time and baked just before serving. You can also substitute different cheeses for a unique flavor!
