Description

These creamy spinach artichoke stuffed shells are the perfect comfort food for cozy nights. They are filled with a delicious mixture of spinach, artichokes, and cheese, then baked to perfection. Enjoy this delightful dish with your family!


Ingredients

12 large pasta shells

1 cup ricotta cheese

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 cup cooked spinach, chopped

1 cup canned artichoke hearts, chopped

2 cloves garlic, minced

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon crushed red pepper flakes (optional)

1/2 cup marinara sauce

1 tablespoon olive oil

Fresh parsley, for garnish


Instructions

1. Preheat the oven to 375°F (190°C).

2. Cook the pasta shells according to package instructions until al dente. Drain and set aside.

3. In a mixing bowl, combine the ricotta cheese, 1/2 cup of mozzarella, Parmesan, cooked spinach, artichokes, garlic, salt, pepper, and red pepper flakes. Mix until well combined.

4. Fill each pasta shell with the cheese and spinach mixture.

5. Spread a layer of marinara sauce on the bottom of a baking dish. Arrange the stuffed shells over the sauce.

6. Top the shells with the remaining marinara sauce and sprinkle with the rest of the mozzarella cheese.

7. Drizzle with olive oil and cover the dish with foil.

8. Bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.

9. Garnish with fresh parsley before serving.


Notes

Feel free to add other spices or ingredients such as mushrooms or sun-dried tomatoes for an extra flavor kick. This dish can also be made ahead of time and stored in the refrigerator before baking.
