Description

These crispy avocado and lime spring rolls are a refreshing and healthy appetizer, perfect for any occasion.


Ingredients

Rice paper wrappers

2 ripe avocados, sliced

1 cup shredded carrots

1 cup cucumber, julienned

1 cup fresh cilantro

1 lime, juiced

Salt to taste

Pepper to taste

Sweet chili sauce for dipping


Instructions

1. 1. Prepare all the ingredients by slicing the avocados and julienning the cucumber.

2. 2. Fill a shallow dish with warm water.

3. 3. Dip one rice paper wrapper into the water for about 10 seconds until soft.

4. 4. Lay the softened wrapper on a clean surface.

5. 5. Place a few slices of avocado, some carrots, cucumber, and cilantro in the center of the wrapper.

6. 6. Drizzle with lime juice and sprinkle with salt and pepper.

7. 7. Fold the sides of the wrapper over the filling and roll tightly from the bottom up.

8. 8. Repeat with remaining wrappers and filling.

9. 9. Serve with sweet chili sauce for dipping.


Notes

For extra crunch, add some sliced bell peppers or lettuce. Enjoy fresh for the best texture.
