Ingredients
1 ripe avocado
1 cup shredded carrots
1 cup cucumber, julienned
1/2 cup red bell pepper, sliced
1/4 cup fresh cilantro, chopped
1 package spring roll wrappers
Oil for frying
Salt to taste
Soy sauce for dipping
Instructions
1. 1. Start by preparing all the vegetables: shred the carrots, julienne the cucumber, and slice the red bell pepper.
2. 2. In a bowl, mash the ripe avocado and mix in the shredded carrots, cucumber, red bell pepper, and cilantro. Season with salt to taste.
3. 3. Take a spring roll wrapper and place a spoonful of the avocado mixture in the center.
4. 4. Fold the sides of the wrapper over the filling, then roll it up tightly from the bottom.
5. 5. Heat oil in a frying pan over medium heat.
6. 6. Fry the spring rolls in batches until golden brown and crispy, about 3-4 minutes per side.
