Ingredients
1 cup corn kernels (fresh or frozen)
1/2 cup all-purpose flour
1/2 cup cheddar cheese, shredded
1–2 jalapeños, finely chopped (seeds removed for less heat)
1/4 cup green onions, chopped
1 large egg
1/2 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)
Vegetable oil for frying
Instructions
1. In a large mixing bowl, combine the corn, flour, cheddar cheese, jalapeños, green onions, egg, baking powder, salt, black pepper, and cayenne pepper.
2. Heat about 1/2 inch of vegetable oil in a large skillet over medium heat.
3. Using a spoon or small ice cream scoop, drop the batter into the hot oil, flattening them slightly.
4. Fry for about 3-4 minutes per side, or until golden brown and crispy.
5. Remove fritters and place them on a paper towel-lined plate to drain excess oil.
6. Serve hot with spicy dipping sauce.
Notes
These fritters can be made ahead of time and reheated in the oven to maintain their crispiness.
Feel free to adjust the level of spiciness by adding more or fewer jalapeños.
