Description
These crispy coconut lime shrimp bites are a delightful appetizer, combining the sweetness of coconut with the tanginess of lime for a perfect flavor balance.
Ingredients
1 lb large shrimp, peeled and deveined
1 cup shredded coconut
1/2 cup panko breadcrumbs
1/4 cup all-purpose flour
2 large eggs, beaten
1 tsp lime zest
1/4 cup lime juice
Salt and pepper to taste
Oil for frying
Instructions
1. In a bowl, combine lime juice, lime zest, salt, and pepper.
2. Add shrimp to the marinade and let sit for 15 minutes.
3. Set up a breading station with flour, beaten eggs, and a mixture of coconut and panko.
4. Dredge each shrimp in flour, dip in egg, then coat with the coconut mixture.
5. Heat oil in a frying pan over medium heat.
6. Fry shrimp for 2-3 minutes on each side until golden brown and crispy.
7. Remove from oil and drain on paper towels.
8. Serve with lime wedges and your favorite dipping sauce.
Notes
For extra flavor, add a pinch of cayenne pepper to the coconut mixture.
These shrimp can also be baked at 400°F for 15-20 minutes for a healthier option.
