Description
These crispy garlic parmesan potato bites are the perfect appetizer or snack, served with a zesty spicy ranch drizzle for an extra kick.
Ingredients
– 2 lbs baby potatoes
– 1/4 cup olive oil
– 1/2 cup grated Parmesan cheese
– 4 cloves garlic, minced
– 1 tsp dried oregano
– 1 tsp paprika
– Salt and pepper to taste
– 1/4 cup fresh parsley, chopped
– 1/2 cup ranch dressing
– 1 tbsp hot sauce
Instructions
1. Preheat the oven to 425°F (220°C).
2. Cut the baby potatoes in half and place them in a large bowl.
3. Add olive oil, minced garlic, oregano, paprika, salt, and pepper, then toss to coat.
4. Spread the potatoes in a single layer on a baking sheet.
5. Roast in the oven for 25-30 minutes or until golden and crispy.
6. In the last 5 minutes of baking, sprinkle grated Parmesan cheese over the potatoes.
7. While the potatoes are baking, mix ranch dressing with hot sauce in a small bowl.
8. Once the potatoes are done, remove from the oven and garnish with fresh parsley.
9. Serve warm with spicy ranch drizzle on the side.
Notes
For extra crispiness, you can broil the potatoes for an additional 2-3 minutes after baking. Adjust the hot sauce in the ranch to suit your spice preference.
