Ingredients
4 medium sweet potatoes
4 slices of bacon
2 tablespoons maple syrup
1/2 cup Greek yogurt
1/4 cup chopped green onions
Salt and pepper to taste
Instructions
1. Preheat the oven to 400°F (200°C).
2. Wash and poke holes in the sweet potatoes with a fork.
3. Place sweet potatoes on a baking sheet and bake for 45-50 minutes, until tender.
4. While the sweet potatoes are baking, cook the bacon in a skillet over medium heat until crispy. Remove and drain on paper towels.
5. In a bowl, mix the Greek yogurt, maple syrup, salt, and pepper.
6. Once the sweet potatoes are done, let them cool slightly, then cut them open and fluff the insides with a fork.
7. Crumble the crispy bacon and mix it with the Greek yogurt mixture.
8. Stuff the sweet potatoes with the bacon mixture and top with chopped green onions.
9. Serve warm and enjoy!

For a vegetarian option, you can skip the bacon and use smoked paprika for flavor.
