Description
These crispy maple pumpkin chicken bites are a delicious twist on classic chicken bites, coated in a sweet and spicy maple pumpkin mixture and served with a tangy sweet mustard dip.
Ingredients
– 1 lb chicken breast, cut into bite-sized pieces
– 1 cup pumpkin puree
– 1/4 cup maple syrup
– 1 tsp garlic powder
– 1 tsp paprika
– 1/2 tsp salt
– 1/4 tsp black pepper
– 1 cup breadcrumbs
– 1/2 cup all-purpose flour
– 2 eggs, beaten
– Oil for frying
– 1/2 cup Dijon mustard
– 1/4 cup honey
Instructions
1. In a bowl, mix pumpkin puree, maple syrup, garlic powder, paprika, salt, and pepper.
2. Dip chicken pieces into the flour, then the egg, and finally coat with the pumpkin mixture followed by breadcrumbs.
3. Heat oil in a frying pan over medium heat.
4. Fry chicken bites until golden brown and cooked through, about 4-5 minutes each side.
5. For the dip, mix Dijon mustard and honey in a small bowl.
6. Serve chicken bites hot with sweet mustard dip.
Notes
For extra crunch, double-dip the chicken in the egg and breadcrumbs.
You can bake the chicken bites at 400°F (200°C) for 20 minutes if you prefer a healthier option.
