These Crispy Sweet Potato Bacon Bites are a delicious blend of sweet and savory, making them perfect for snacking or as an appetizer. Paired with a spicy aioli for a kick!
Ingredients
– 2 large sweet potatoes, peeled and cut into bite-sized cubes
– 8 slices of bacon, cut into halves
– 2 tablespoons olive oil
– 1 teaspoon paprika
– 1 teaspoon garlic powder
– Salt and pepper to taste
Spicy Aioli:
– 1/2 cup mayonnaise
– 1 tablespoon sriracha (or to taste)
– 1 teaspoon lemon juice
– 1 clove garlic, minced
– Salt to taste

3. 2. In a large bowl, toss the sweet potato cubes with olive oil, paprika, garlic powder, salt, and pepper until evenly coated.
4. 3. Wrap a piece of bacon around each sweet potato cube and secure it with a toothpick.
5. 4. Place the wrapped sweet potatoes on a baking sheet lined with parchment paper.
6. 5. Bake in the preheated oven for 25-30 minutes, until the bacon is crispy and the sweet potatoes are tender.
7. 6. While the bites are baking, prepare the spicy aioli by combining mayonnaise, sriracha, lemon juice, minced garlic, and salt in a small bowl. Mix well.

Notes
– Feel free to adjust the spiciness of the aioli to your liking by adding more or less sriracha.
– These bites can be made ahead of time and reheated in the oven before serving.
