This Crockpot French Onion Meatloaf is a savory blend of ground beef, caramelized onions, and Swiss cheese, slow-cooked to perfection for a comforting meal.
Ingredients
1 1/2 pounds ground beef
1 large onion, sliced
1 cup beef broth
1 cup Swiss cheese, shredded
1/2 cup breadcrumbs
1/4 cup ketchup
2 eggs
1 tablespoon Worcestershire sauce
1 teaspoon garlic powder
1 teaspoon onion powder
Salt and pepper to taste
Instructions
1. In a skillet, caramelize the sliced onions over medium heat until golden brown.
2. In a large bowl, combine ground beef, breadcrumbs, eggs, ketchup, Worcestershire sauce, garlic powder, onion powder, salt, and pepper.
3. Mix in the caramelized onions and half of the Swiss cheese into the meat mixture.
4. Shape the mixture into a loaf and place it in the crockpot.
5. Pour beef broth around the meatloaf in the crockpot.
6. Cover and cook on low for 6 hours or until the meatloaf is cooked through.
7. In the last 30 minutes of cooking, sprinkle the remaining Swiss cheese on top and cover until melted.
Notes
For added flavor, consider adding fresh herbs like thyme or parsley to the meat mixture.
Serve with a side of mashed potatoes or a fresh salad for a complete meal.
