Description

These crunchy Parmesan herb potato stacks are a delightful side dish that combines the rich flavors of Parmesan cheese and fresh herbs with the satisfying crunch of baked potatoes.


Ingredients

4 medium potatoes, thinly sliced

1 cup grated Parmesan cheese

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

Fresh parsley for garnish


Instructions

1. Preheat the oven to 400 degrees F (200 degrees C).

2. In a large bowl, combine the sliced potatoes, olive oil, garlic powder, oregano, thyme, salt, and pepper.

3. Toss until the potatoes are evenly coated.

4. Layer the potato slices in a stack on a baking sheet lined with parchment paper.

5. Sprinkle the grated Parmesan cheese generously over the top of the stacks.

6. Bake in the preheated oven for 25-30 minutes, or until the potatoes are golden brown and crispy.

7. Remove from the oven and let cool for a few minutes before serving.

8. Garnish with fresh parsley before serving.


Notes

For extra crunch, you can broil the stacks for the last 2-3 minutes of baking.
