Description

These Crunchy Sweet Potato Nachos are a delicious and healthy twist on a classic appetizer, perfect for sharing with friends and family.


Ingredients

2 large sweet potatoes

1 tablespoon olive oil

1 teaspoon paprika

1 teaspoon garlic powder

Salt and pepper to taste

1 cup black beans, rinsed and drained

1 cup corn, canned or frozen

1 cup shredded cheese (cheddar or mozzarella)

1 avocado, diced

1/2 cup salsa

Fresh cilantro for garnish


Instructions

1. Preheat the oven to 425°F (220°C).

2. Slice the sweet potatoes into thin rounds and place them in a bowl.

3. Drizzle with olive oil, paprika, garlic powder, salt, and pepper; toss to coat.

4. Spread the sweet potato slices in a single layer on a baking sheet.

5. Bake for 20-25 minutes, flipping halfway through, until crispy.

6. Remove from the oven and layer with black beans, corn, and cheese.

7. Return to the oven for an additional 5-7 minutes until the cheese is melted.

8. Top with diced avocado, salsa, and fresh cilantro before serving.
