Ingredients
1 1/2 cups crushed chocolate cookies
1/2 cup unsalted butter, melted
1 cup granulated sugar
3 (8 oz) packages cream cheese, softened
1 cup sour cream
1 teaspoon vanilla extract
4 large eggs
1 cup semi-sweet chocolate chips
1/2 cup cooked bacon, chopped
1/4 cup cocoa powder
1/2 cup heavy cream
Instructions
1. Preheat the oven to 325°F (160°C).
2. In a bowl, mix crushed chocolate cookies and melted butter, then press into the bottom of a springform pan.
3. In a large mixing bowl, beat cream cheese and sugar until smooth.
4. Add sour cream and vanilla extract, mixing until combined.
5. Add eggs one at a time, mixing well after each addition.
6. Fold in chocolate chips, chopped bacon, and cocoa powder.
7. Pour the cheesecake mixture over the crust and smooth the top.
8. Bake for 60 minutes or until the center is set. Allow to cool before refrigerating for at least 4 hours.
Notes
For a richer flavor, use dark chocolate chips.
Top with whipped cream and additional bacon bits for garnish.
