Ingredients
2 cups graham cracker crumbs
1/2 cup unsalted butter, melted
1/4 cup granulated sugar
4 (8 oz) packages cream cheese, softened
1 cup granulated sugar
1 teaspoon vanilla bean paste
4 large eggs
1 cup sour cream
1/4 cup all-purpose flour
Instructions
1. 1. Preheat the oven to 325°F (160°C).
2. 2. In a bowl, combine graham cracker crumbs, melted butter, and sugar. Press into the bottom of a greased 9×13 inch baking dish.
3. 3. In a large mixing bowl, beat cream cheese until smooth. Gradually add sugar and vanilla bean paste, mixing until well combined.
4. 4. Add eggs one at a time, mixing on low speed until just combined.
5. 5. Stir in sour cream and flour until smooth.
6. 6. Pour the cheesecake mixture over the crust and smooth the top.
7. 7. Bake for 45-50 minutes or until the center is set but slightly jiggly.
8. 8. Turn off the oven and let the cheesecake cool in the oven with the door ajar for 1 hour.
9. 9. Refrigerate for at least 4 hours before cutting into bars.
