Description

These Fiery Buffalo Cauliflower Bites are a spicy, crispy, and delicious alternative to traditional buffalo wings. Paired with a creamy blue cheese dip, they make for a perfect appetizer or snack!


Ingredients

1 head cauliflower, cut into bite-sized florets

1 cup all-purpose flour

1 cup water

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup buffalo sauce

2 tablespoons olive oil

For the Blue Cheese Dip:

1/2 cup blue cheese, crumbled

1/2 cup sour cream

1/4 cup mayonnaise

1 tablespoon lemon juice

1/4 teaspoon garlic powder

Salt and pepper to taste


Instructions

1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.

2. In a large bowl, whisk together the flour, water, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper until smooth.

3. Dip each cauliflower floret into the batter, allowing the excess to drip off, and place them on the prepared baking sheet.

4. Bake for 20 minutes, flipping halfway through, until the cauliflower is golden and crispy.

5. In a separate bowl, combine the buffalo sauce and olive oil. Toss the baked cauliflower in the buffalo sauce mixture until well coated.

6. Return the coated cauliflower to the baking sheet and bake for an additional 10 minutes.

7. While the cauliflower is baking, prepare the blue cheese dip by mixing together the blue cheese, sour cream, mayonnaise, lemon juice, garlic powder, salt, and pepper in a bowl until smooth.

8. Serve the hot buffalo cauliflower bites with the blue cheese dip on the side.


Notes

For extra crispiness, broil for 1-2 minutes after baking.

Adjust the level of spiciness by using less cayenne pepper or a milder buffalo sauce.

These bites can be made ahead of time and reheated in the oven.
