Ingredients
2 lbs ground beef
1 onion, chopped
3 carrots, sliced
3 potatoes, diced
2 cups beef broth
1 can diced tomatoes
2 cloves garlic, minced
1 tsp thyme
1 tsp rosemary
Salt and pepper to taste
Instructions
1. In a large pot, brown the ground beef over medium heat.
2. Add the chopped onion and garlic, cooking until softened.
3. Stir in the carrots and potatoes, cooking for another 5 minutes.
4. Pour in the beef broth and diced tomatoes, bringing to a boil.
5. Add thyme, rosemary, salt, and pepper, then reduce heat to simmer.
6. Cover and let simmer for 45 minutes, stirring occasionally.
