Description

This Herb-crusted Rack of Lamb with Mint Glaze is a succulent dish that combines tender lamb with a flavorful herb crust and a refreshing mint glaze, perfect for special occasions.


Ingredients

1 rack of lamb, frenched

2 tablespoons olive oil

2 cloves garlic, minced

1 tablespoon fresh rosemary, chopped

1 tablespoon fresh thyme, chopped

1 tablespoon Dijon mustard

Salt and pepper to taste

1/2 cup fresh mint leaves

1/4 cup honey

1 tablespoon lemon juice


Instructions

1. Preheat the oven to 400°F (200°C).

2. In a bowl, mix olive oil, garlic, rosemary, thyme, Dijon mustard, salt, and pepper.

3. Rub the mixture over the rack of lamb.

4. Place the lamb on a baking sheet and roast for 25-30 minutes for medium-rare.
