This Herb-infused Lemon Garlic Chicken Thighs recipe features tender chicken marinated in a zesty blend of lemon, garlic, and fresh herbs, perfect for a delicious dinner.
Ingredients
4 chicken thighs, bone-in and skin-on
2 tablespoons olive oil
4 cloves garlic, minced
Juice of 1 lemon
Zest of 1 lemon
1 tablespoon fresh rosemary, chopped
1 tablespoon fresh thyme, chopped
Salt and pepper to taste
Instructions
1. 1. In a bowl, mix olive oil, minced garlic, lemon juice, lemon zest, rosemary, thyme, salt, and pepper.
2. 2. Place chicken thighs in a resealable bag and pour marinade over them.
3. 3. Seal the bag and refrigerate for at least 30 minutes, or up to 2 hours.
4. 4. Preheat the oven to 400°F (200°C).
5. 5. Remove chicken from the marinade and place on a baking sheet.
6. 6. Bake for 35-40 minutes, or until the internal temperature reaches 165°F (74°C).
7. 7. Let the chicken rest for 5 minutes before serving.

Notes
For extra flavor, marinate the chicken overnight.
