Ingredients
4 medium sweet potatoes (about 2 lbs)
1 lb ground beef
1/2 cup BBQ sauce
1 cup shredded cheddar cheese
1/2 cup diced red onion
1/4 cup chopped fresh cilantro
Salt and pepper to taste
Olive oil for drizzling
Instructions
1. 1. Preheat your oven to 400°F (200°C).
2. 2. Wash the sweet potatoes and pierce them several times with a fork. Place on a baking sheet and drizzle with olive oil, then sprinkle with salt.
3. 3. Bake the sweet potatoes for 45-50 minutes, or until tender.
4. 4. In a skillet over medium heat, brown the ground beef until fully cooked. Drain excess fat.
5. 5. Stir in the BBQ sauce and season with salt and pepper. Cook for an additional 5 minutes.
