Description
Crispy potato skins loaded with bacon, cheddar cheese, and green onions, served with a smoky ranch dip for the ultimate comfort food experience.
Ingredients
4 large russet potatoes
8 slices of bacon, cooked and crumbled
1 cup shredded cheddar cheese
1/4 cup sour cream
1/4 cup green onions, chopped
1 teaspoon olive oil
Salt and pepper to taste
1/2 cup ranch dressing
1 teaspoon smoked paprika
Instructions

2. Preheat your oven to 400°F (200°C).
3. Wash and pierce the potatoes with a fork. Rub them with olive oil, salt, and pepper.
4. Bake the potatoes for 45-60 minutes until they are tender.
5. Once baked, let them cool slightly, then cut them in half and scoop out some of the flesh.
6. Brush the insides with olive oil and season with salt and pepper.
7. Place the potato halves skin-side down on a baking sheet and bake for an additional 10-15 minutes until crispy.
8. Remove from the oven and fill each potato skin with crumbled bacon and cheddar cheese.
9. Return to the oven for another 5-10 minutes until the cheese is melted.
10. While the skins are baking, mix the ranch dressing with smoked paprika in a bowl to create the smoky ranch dip.
11. Remove the potato skins from the oven, top with green onions, and serve with the smoky ranch dip.

For extra flavor, you can add jalapeños or other toppings as desired. These potato skins can be made ahead of time and reheated in the oven.
