Description
These Loaded Cheeseburger Potato Skins are the perfect crispy, cheesy, and beefy appetizer for your New Year’s Eve party!
Ingredients
4 large russet potatoes
1 lb ground beef
1 cup shredded cheddar cheese
1/2 cup cooked bacon, crumbled
1/4 cup green onions, sliced
1/4 cup sour cream
Salt and pepper to taste
Olive oil for brushing
Instructions
1. Preheat the oven to 400°F (200°C).
2. Wash and pierce the potatoes with a fork. Rub them with olive oil and sprinkle with salt. Bake for 45-60 minutes until tender.
3. Remove the potatoes from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out some of the flesh, leaving a small border.
4. In a skillet, cook the ground beef over medium heat until browned. Season with salt and pepper.
5. Fill each potato skin with the cooked ground beef, then top with shredded cheddar cheese and crumbled bacon.
6. Return the loaded potato skins to the oven and bake for an additional 10-15 minutes until the cheese is melted and bubbly.
7. Remove from the oven and top with sliced green onions and a dollop of sour cream before serving.
Notes
These can be made ahead of time and reheated in the oven before serving.
Feel free to add your favorite toppings like jalapeños or different cheeses!
