Description
These Loaded Chili Cheese Sweet Potato Skins are the perfect game day snack! Crispy sweet potato skins topped with chili, melted cheese, and your favorite toppings. A delicious twist on a classic appetizer!
Ingredients
4 medium sweet potatoes
2 cups cooked chili (beef or vegetarian)
1 cup shredded cheddar cheese
1/2 cup sour cream
1/4 cup green onions, chopped
1 teaspoon olive oil
Salt and pepper to taste
Optional toppings: jalapeños, cilantro
Instructions
1. Preheat your oven to 400°F (200°C).
2. Wash the sweet potatoes and poke holes in them with a fork. Rub with olive oil and sprinkle with salt.
3. Place sweet potatoes on a baking sheet and bake for 45-50 minutes or until tender.
4. Once cooked, let them cool slightly, then cut in half lengthwise and scoop out some flesh, leaving about 1/4 inch of potato on the skin.
5. Return the skins to the baking sheet, fill each with chili, and top with shredded cheddar cheese.
6. Bake for an additional 10-15 minutes, until the cheese is melted and bubbly.
7. Remove from the oven, top with sour cream, green onions, and any optional toppings you desire.
Notes
For a spicier kick, add jalapeños on top.
These can be made ahead of time: prepare the sweet potato skins, fill them with chili and cheese, and store in the fridge until ready to bake.
