Ingredients
4 medium sweet potatoes, peeled and cubed
1/2 cup maple syrup
1/4 cup unsweetened almond milk
1 teaspoon chipotle powder
1 teaspoon cinnamon
Salt to taste
1 cup oats
1/2 cup chopped pecans
1/4 cup melted coconut oil
1/4 cup brown sugar
Instructions
1. 1. Preheat the oven to 375°F (190°C).
2. 2. Boil the sweet potatoes in a large pot of salted water until tender, about 15-20 minutes.
3. 3. Drain and transfer the sweet potatoes to a large mixing bowl.
4. 4. Add maple syrup, almond milk, chipotle powder, cinnamon, and salt to the bowl. Mash until smooth.
5. 5. Spread the sweet potato mixture into a greased 9×13 inch baking dish.

Notes
