Ingredients
1 cup rolled oats
1/2 cup chopped pecans
2 cups almond milk
1/4 cup maple syrup
1 teaspoon vanilla extract
1/2 teaspoon cinnamon
1/4 teaspoon salt
Fresh fruit for topping
Instructions
1. In a medium saucepan, combine almond milk, oats, salt, and cinnamon.
2. Bring to a boil over medium heat, stirring occasionally.
3. Reduce heat and simmer for 5 minutes, stirring frequently.
4. Remove from heat and stir in maple syrup, vanilla extract, and chopped pecans.
5. Let sit for 2 minutes to thicken.
6. Serve warm, topped with fresh fruit and additional pecans if desired.
Notes
For a creamier texture, use coconut milk instead of almond milk.
Feel free to substitute pecans with walnuts or almonds for variety.
