Description

This Mediterranean Chickpea Salad Wrap is a healthy and delicious option for dinner, packed with protein and fresh vegetables.


Ingredients

1 can chickpeas, drained and rinsed

1 cup cherry tomatoes, halved

1 cucumber, diced

1/4 red onion, finely chopped

1/4 cup feta cheese, crumbled

1/4 cup parsley, chopped

2 tablespoons olive oil

1 tablespoon lemon juice

Salt and pepper to taste

4 large whole wheat tortillas


Instructions

1. In a large bowl, combine chickpeas, cherry tomatoes, cucumber, red onion, feta cheese, and parsley.

2. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

3. Pour the dressing over the salad and toss to combine.

4. Lay out the tortillas on a flat surface.
