Description

These Mediterranean Grilled Veggie Wraps are a delicious and healthy option for lunch, packed with flavor and nutrients.


Ingredients

4 large whole wheat tortillas

1 medium zucchini, sliced

1 red bell pepper, sliced

1 yellow bell pepper, sliced

1 cup cherry tomatoes, halved

1 red onion, sliced

2 tablespoons olive oil

1 teaspoon dried oregano

Salt and pepper to taste

1 cup hummus

Fresh spinach leaves


Instructions

1. 1. Preheat the grill to medium-high heat.

2. 2. In a large bowl, toss the zucchini, bell peppers, cherry tomatoes, and onion with olive oil, oregano, salt, and pepper.

3. 3. Grill the vegetables for about 8-10 minutes, turning occasionally, until they are tender and slightly charred.
