Description

A refreshing Mediterranean quinoa salad bowl packed with nutrients and flavor, perfect for breakfast.


Ingredients

1 cup quinoa

2 cups water

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup feta cheese, crumbled

1/4 cup olives, sliced

1/4 cup fresh parsley, chopped

3 tablespoons olive oil

2 tablespoons lemon juice

Salt and pepper to taste


Instructions

1. 1. Rinse the quinoa under cold water.

2. 2. In a pot, bring water to a boil and add quinoa.

3. 3. Reduce heat, cover, and simmer for 15 minutes.

4. 4. Remove from heat and let it sit for 5 minutes, then fluff with a fork.

5. 5. In a large bowl, combine cooked quinoa, tomatoes, cucumber, onion, feta, olives, and parsley.

6. 6. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.

7. 7. Pour the dressing over the salad and toss to combine.
