Creamy and flavorful roasted garlic mashed sweet potatoes, perfect as a side dish for any meal.
Ingredients
2 large sweet potatoes
1 head of garlic
2 tablespoons butter
1/4 cup milk
Salt to taste
Pepper to taste
Instructions
1. 1. Preheat the oven to 400°F (200°C).
2. 2. Cut the top off the head of garlic and wrap it in aluminum foil.
3. 3. Roast the garlic in the oven for 30 minutes.
4. 4. While the garlic is roasting, peel and chop the sweet potatoes.
5. 5. Boil the sweet potatoes in salted water until tender, about 15 minutes.
6. 6. Drain the sweet potatoes and return them to the pot.
7. 7. Squeeze the roasted garlic cloves into the pot with the sweet potatoes.
8. 8. Add butter, milk, salt, and pepper, then mash until smooth.
9. 9. Serve warm.
Notes
For a vegan option, substitute butter with olive oil and milk with plant-based milk.
