Description
This rotisserie chicken recipe is easy to prepare and packed with flavor, perfect for a family dinner or meal prep.
Ingredients
1 whole chicken (about 4–5 lbs)
2 tablespoons olive oil
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon paprika
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon dried thyme
1 teaspoon dried rosemary
Instructions
1. Preheat your oven to 375 degrees F (190 degrees C).
2. Pat the chicken dry with paper towels.
3. In a small bowl, mix together olive oil, garlic powder, onion powder, paprika, salt, black pepper, thyme, and rosemary.
4. Rub the spice mixture all over the chicken, making sure to get under the skin.
5. Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165 degrees F (75 degrees C).
6. Let the chicken rest for 10 minutes before carving and serving.
Notes
For extra crispy skin, broil the chicken for the last 5 minutes of cooking.
You can use leftovers in salads, sandwiches, or soups.
