A delicious and nutritious quinoa bowl featuring savory herb chicken, fresh vegetables, and a zesty dressing.
Ingredients
1 cup quinoa
2 cups chicken broth
2 chicken breasts, diced
2 tablespoons olive oil
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon garlic powder
Salt and pepper to taste
1 cup cherry tomatoes, halved
1 cucumber, diced
1/4 cup fresh parsley, chopped
Juice of 1 lemon
Instructions
1. Rinse quinoa under cold water.
2. In a pot, combine quinoa and chicken broth; bring to a boil.
3. Reduce heat, cover, and simmer for 15 minutes or until liquid is absorbed.
4. In a skillet, heat olive oil over medium heat; add chicken.
5. Season with oregano, thyme, garlic powder, salt, and pepper; cook until golden.
6. In a large bowl, combine cooked quinoa, chicken, tomatoes, cucumber, and parsley.
7. Drizzle with lemon juice and toss to combine.
Notes
For added flavor, marinate the chicken in olive oil and herbs for 30 minutes before cooking.
Serve warm or cold as a refreshing lunch option.
