Savory Herb Crusted Chicken Thighs are juicy and flavorful, paired with creamy garlic mashed potatoes for a comforting dinner.
Ingredients
4 chicken thighs, bone-in and skin-on
2 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon garlic powder
Salt and pepper to taste
2 pounds potatoes, peeled and cubed
4 cloves garlic, minced
1/2 cup milk
4 tablespoons butter
Instructions
1. 1. Preheat the oven to 400°F (200°C).
2. 2. In a bowl, mix olive oil, thyme, rosemary, garlic powder, salt, and pepper.
3. 3. Rub the herb mixture all over the chicken thighs.
4. 4. Place the chicken thighs on a baking sheet and roast for 35-40 minutes until cooked through.
5. 5. Meanwhile, boil the potatoes in salted water until tender, about 15-20 minutes.
6. 6. Drain the potatoes and return them to the pot. Add garlic, milk, and butter, then mash until smooth.
7. 7. Serve the chicken thighs with a generous scoop of garlic mashed potatoes.
8. 8. Garnish with fresh herbs if desired.
Notes
For extra crispy skin, broil the chicken for the last 5 minutes of cooking.
