Description
Deliciously smoky pulled pork stuffed into tender sweet potatoes for a hearty and flavorful meal.
Ingredients
4 medium sweet potatoes
2 lbs pork shoulder
1 cup BBQ sauce
1 tablespoon smoked paprika
1 tablespoon garlic powder
1 tablespoon onion powder
Salt and pepper to taste
Optional toppings: coleslaw, green onions, cilantro
Instructions
1. Preheat your oven to 400°F (200°C).
2. Pierce the sweet potatoes with a fork and place them on a baking sheet. Bake for 45-60 minutes until tender.
3. While the potatoes are baking, season the pork shoulder with smoked paprika, garlic powder, onion powder, salt, and pepper.
4. Place the seasoned pork in a slow cooker and cover with BBQ sauce. Cook on low for 8 hours or on high for 4 hours.
5. Once the pork is done, shred it with two forks and mix it with the BBQ sauce in the slow cooker.
6. When the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut them open and fluff the insides with a fork.
7. Stuff the sweet potatoes with the pulled pork mixture and top with optional toppings like coleslaw, green onions, or cilantro.
Notes
For a spicier kick, add some hot sauce to the pulled pork. You can also make the pulled pork ahead of time and reheat it when ready to serve.
