Description

This Smoky Chipotle Chicken and Quinoa Bake is a hearty and flavorful dish that combines tender chicken, smoky chipotle seasoning, and nutritious quinoa, all baked to perfection.


Ingredients

1 lb chicken breast, diced

1 cup quinoa, rinsed

2 cups chicken broth

1 can black beans, drained and rinsed

1 cup corn, frozen or canned

1 cup diced tomatoes

2 tablespoons chipotle in adobo sauce

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup shredded cheese (optional)


Instructions

1. Preheat the oven to 375°F.

2. In a large skillet, cook the diced chicken over medium heat until browned.

3. Add the quinoa, chicken broth, black beans, corn, diced tomatoes, chipotle sauce, cumin, smoked paprika, salt, and pepper to the skillet.

4. Stir to combine and bring to a simmer.

5. Transfer the mixture to a baking dish and cover with foil.

6. Bake for 25 minutes, then remove the foil and sprinkle cheese on top if using.

7. Bake for an additional 10 minutes or until the cheese is melted and bubbly.


Notes

For extra flavor, marinate the chicken in chipotle sauce for a few hours before cooking.
