Ingredients
1 lb shrimp, peeled and deveined
2 ripe avocados, mashed
1 lime, juiced
1 jalapeño, finely chopped
1/4 cup cilantro, chopped
Salt and pepper to taste
Tortilla chips for serving
Instructions
1. In a bowl, combine the mashed avocados, lime juice, jalapeño, cilantro, salt, and pepper.
2. In a skillet, cook the shrimp over medium heat until pink and cooked through, about 3-4 minutes.
3. Remove shrimp from heat and let cool slightly.
4. Chop the shrimp into bite-sized pieces and fold into the avocado mixture.
5. Spoon the mixture onto tortilla chips.
6. Garnish with additional cilantro and lime wedges if desired.
Notes
For extra spice, add more jalapeño or a dash of hot sauce.
