Description

These Spicy Chipotle BBQ Pulled Pork Nachos are loaded with tender pulled pork, zesty chipotle sauce, and melting cheese, perfect for a crowd-pleasing appetizer or game day treat!


Ingredients

– 2 lbs pork shoulder

– 1 cup chipotle BBQ sauce

– 1 bag tortilla chips

– 2 cups shredded cheddar cheese

– 1 cup black beans, rinsed and drained

– 1 cup corn

– 1 jalapeño, sliced

– 1/2 cup sour cream

– 1/4 cup chopped fresh cilantro

– 1 avocado, diced


Instructions

2. Preheat your slow cooker on low.

3. Rub the pork shoulder with salt and pepper, then place it in the slow cooker.

4. Pour the chipotle BBQ sauce over the pork and cover.

5. Cook on low for 8 hours or until the pork is tender and shreds easily.

6. Remove the pork from the slow cooker and shred it with two forks.

7. On a large baking sheet, spread the tortilla chips in an even layer.

8. Top the chips with the shredded pork, black beans, corn, and cheddar cheese.

9. Broil in the oven for 3-5 minutes, until the cheese is melted and bubbly.
