Ingredients
2 cups cooked brown rice
1 lb chicken breast, diced
2 tablespoons chipotle sauce
1 teaspoon cumin
1 teaspoon paprika
1 cup black beans, drained
1 cup corn, drained
1 avocado, sliced
1 cup cherry tomatoes, halved
1/2 cup shredded cheese
1/4 cup fresh cilantro, chopped
Salt and pepper to taste
Instructions
1. 1. Cook the brown rice according to package instructions.
2. 2. In a bowl, mix diced chicken with chipotle sauce, cumin, and paprika.
3. 3. Heat a skillet over medium heat and cook the chicken until fully cooked.
4. 4. In serving bowls, layer the cooked rice, black beans, and corn.
