Description

A delicious and spicy quesadilla filled with chipotle chicken, cheese, and veggies.


Ingredients

2 cups cooked chicken, shredded

1 cup shredded cheese (cheddar or Monterey Jack)

1/2 cup diced bell peppers

1/4 cup diced onions

2 tablespoons chipotle sauce

4 large flour tortillas

1 tablespoon olive oil

Salt and pepper to taste


Instructions

1. In a bowl, mix the shredded chicken, chipotle sauce, bell peppers, onions, salt, and pepper.

2. Heat a skillet over medium heat and add olive oil.

3. Place one tortilla in the skillet and sprinkle half with cheese.

4. Add a portion of the chicken mixture on top of the cheese.

5. Fold the tortilla over and cook until golden brown, about 3-4 minutes.

6. Flip and cook the other side until the cheese is melted and the tortilla is crispy.

7. Repeat with remaining tortillas and filling.


Notes

Serve with salsa and sour cream for dipping.

Feel free to add more vegetables or adjust spice levels to taste.
